Instructions:
1. Prepare the Pineapple Filling:
– In a saucepan, combine the chopped fresh pineapple, 2-3 tablespoons of sugar, and 2 cups of water.
– Cook over medium heat until the sugar is dissolved (this should only take a few minutes).
– Remove from heat and allow the filling to cool completely before transferring it to a small bowl. Keep it aside for later use.
2. Preheat the Oven:
– Preheat your oven to 180°C (350°F) for about 5 minutes.
3. Prepare the Baking Tin:
– Grease a round baking tin with butter, applying it on all the sides. don’t use melted butter, and dust it lightly with flour to prevent sticking.
4. Mix the Cake Batter:
– In a mixing bowl, combine 3 large eggs and 100 grams of sugar.
– Using an electric beater, blend them until fluffy and light in color.
– Add 8 drops of vanilla essence to this mixture and beat again until well combined.
– Gradually sift in 100 grams of all-purpose flour (maida) while carefully folding it into the batter with a spatula, being cautious not to overmix.
5. Prepare the Baking Process:
– Pour the batter into the greased baking tin, ensuring an even spread.
– Important: Do not tap or shake the tin after pouring the batter. Instead, gently use a toothpick or a spatula to remove any air bubbles present in the batter.
– Place the baking tin in the preheated oven and bake for about 15 minutes. After 15 minutes, check the cake for doneness by inserting a toothpick in the center. If it is not done, continue baking for an additional 5 minutes, then check again. If it comes out clean, the cake is ready; if not, check again after a few more minutes.
6. Prepare the Whipping Cream:
– While the cake is baking, whip 250 grams of Tropolite whipping cream until stiff peaks form. No sugar should be added.
7. Assemble the Cake:
– Once the pineapple cake has cooled for 30 minutes, cut it into three even layers.
– To moisten each layer, brush the pineapple syrup (reserved from the pineapple filling preparation) onto the surface of the cake layers using a pastry brush.
– Place the bottom layer on a cake board. Spread a layer of whipped cream over the moist cake layer, followed by a generous amount of pineapple filling.
– Place the second layer of cake on top and repeat: moisten with pineapple syrup, add whipped cream, and top with pineapple filling.
– Finally, place the third layer of cake on top. Moisten this layer with the pineapple syrup, then spread a generous layer of whipped cream over the top and sides of the cake for decoration.
8. Decorate the Cake:
